  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 1 medium tomato, diced
  • 2 T. tahini
  • 6 T. extra virgin olive oil
  • 1/2 c. parsley, chopped
  • Sea salt to taste

Directions to make our Orange-Tahini Piyaz:

  1. Combine the Base: In a large bowl, mix the rinsed beans with the sliced onions and diced tomato.
  2. Create the Zesty Sauce: In a smaller bowl, whisk together the lemon and orange zest and juice, tahini, olive oil, and a pinch of sea salt.
  3. Toss and Serve: Pour the tahini-orange sauce over the bean mixture. Toss everything well to coat. Serve the salad in bowls, garnished with fresh parsley.

  • In a small bowl add lemon and orange zest, lemon and orange juice, tahini, olive oil and salt.
  • Mix to combine.  Taste and adjust seasoning if desired.
  • Drizzle tahini orange sauce on beans and toss to combine.
  • Place into serving bowls and garnish with chopped parsley.
