The sweetness of the roasted pears pairs beautifully with the rich, tangy flavor of blue cheese to create this roasted pear salad. This salad is not just a dish; it’s an experience.

Prep and Cook – Quick and Easy

Now, let’s talk preparation. With a mere 5-minute prep time and a 25-30 minute cook time, this salad serves six and is ideal for a quick yet impressive meal. Moreover, the ingredients are simple and fresh, ensuring a delightful meal every time.

Ingredients – Freshness is Key for our Roasted Pear Salad

You’ll need 3 large firm pears, cored and cut into wedges, a bit of extra virgin olive oil, sea salt, black pepper, balsamic vinegar, fresh arugula, and, of course, crumbled blue cheese. The freshness of these ingredients is crucial for the best taste.

Roasting Pears – The Secret

The secret to this salad’s unique flavor is in the roasting of the pears. Arrange the pear slices on a baking sheet, lightly brushed with olive oil, and seasoned to your liking. Roast them until they’re beautifully browned and tender. This step enhances the pears’ natural sweetness, making them the star of the dish.

Balsamic Glaze – A Flavorful Addition

While your pears are roasting, simmer your balsamic vinegar until it’s reduced to a thick, syrupy glaze. This glaze adds a rich, tangy layer of flavor that complements the roasted pears and blue cheese wonderfully.

Equipment

Ingredients

  • 3 large firm pears cored and cut into wedges
  • ¼ cup extra virgin olive oil divided
  • 1 dash sea salt to taste
  • 1 dash black pepper to taste
  • 1 cup balsamic vinegar
  • 6 cups fresh arugula washed and dried
  • 6 oz blue cheese crumbled

Instructions

  • Pre-heat oven to 375°F and line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat.
  • Arrange pear slices in a single layer on the prepared baking sheet without overcrowding. Lightly brush the pear wedges with 2 tablespoons of the olive oil and season with salt and black pepper, as desired.
  • Place baking sheet in the pre-heated oven and roast for approximately 15 minutes. Remove from oven and turn each pear.
  • Return to oven and continue roasting until the pears are evenly browned and fork tender, approximately 10-15 minutes. Remove pears from oven and cool slightly. Set aside.
  • While pears are roasting, add balsamic vinegar to a small saucepan set over medium heat and bring to a boil. Reduce heat to a simmer and stir frequently until the liquid is reduced to 1/3 of its original volume. Liquid will be thick and syrupy when it is ready. Remove from heat and keep warm until ready to serve.
  • Add arugula, roasted pear slices, and blue cheese to a large salad bowl. Add the remaining olive oil and toss to combine.
  • Drizzle the warm balsamic glaze on top and serve immediately. Enjoy!
